According to ZKnives.com, these steel types are placed in general groupings that help make a little more sense of where each falls in sense of performance. Now keep in mind that some of these steels would better fit in between categories but this list is to give you a general idea where they fall. Many people won’t agree with the groupings but again this is a broad generalization to give you a perspective.

Lowest Quality

420 and 420J would fall into this category. These are very stain resistant and tough, however they are very weak and not very wear resistant. In general they will lose their edge quickly. These are usually found in less-expensive knives.
